Heating Cabinet
Available in insulated or non insulated. Keeps prepared foods stored and warm. Often used for storage and transportation for catered events.
Non Insulated Cabinet requires 20 amp plug.HEATING/HOLDING CABINET
***DO NOT USE EXTENSION CORD WITH UNIT!! MUST BE PLUGGED DIRECTLY INTO WALL OUTLET***
1.) Place unit on secure level surface and plug unit into wall outlet.
Please note – Non insulated heating cabinets are equipped with a 20 amp plug(one vertical pole and one horizontal pole). Ensure wall receptacle is equipped with 20 amp outlet before using!
2.) Push “POWER” switch to “ON”.
2.) Push “MODE SELECTION” switch to “ON” if equipped on unit.
3.) Turn “AIR” dial to temperature needed.
Note: NO. 8 is approx. 175 degrees F
NO.6 is approx. 165 degrees F
Proper food holding temperature is 140 degree F or higher.
4.) Preheat cabinet for 30 minutes before use.
TO USE AS PROOF CABINET(if equipped)
1.) Fill water pan located in the bottom of the unit.
2.) Push “POWER” switch to “ON”.
3.) Push “MODE SELECTION” switch to “PROOF”.
4.) Turn “HUMIDITY” dial to No. 8. (approx 95 degree F and 90-95% humidity.
5.) Turn “AIR” dial to “OFF”
6.) Preheat for 30 minutes.
7.) Put fresh or fully thawed dough in cabinet.
**Check water level in water pan if you are proofing longer than 90 minutes. Fill with clean HOT water**
***RETURN CABINET FREE OF FOOD AND CLEAN ***
